The Aimery Cremant de Limoux Brut Rosé is so totally in my wheelhouse. Pale and very dry, it cuts right through your smoky, eggy, cheesy, rich brunch fare with enthusiasm.

If you’re wondering what the “1531” refers to on the label, it does not denote  a remarkable well-preserved 481-year-old bottle of bubbles. Rather it is a tribute to the first-ever mention of sparkling wine back in 1531 in the region of Limoux–where the Aimery Cremant hails from–long before the birth of the more celebrated (and costly) Champagne.

The Aimery is one of the best bargains out there in pink bubbles; make room in your fridge for one or a dozen.
